Ginger-garlic paste: 3 tsp.<br />

Yogurt: 1 cup<br />

Tamarind: 1 tsp.<br />

<li>To make kofta, mix the grated cabbage with salt, red chili powder and coriander powder.</li>
<li>Mix well with hands and make medium sized round balls and keep aside. </li>
<li>Heat the appe pan on low heat and when warm, add a drop of oil in each cavity. </li>
<li>Put one cabbage ball in each cavity. DO NOT COVER. <div class="separator" style="clear: both; text-align: center;">

<li>Let cook for some time and turn the kofta to other side. Let cook both sides and remove from the appe pan and keep aside. <div class="separator" style="clear: both; text-align: center;">

<li>To prepare the curry: heat 2 tsp. oil and crackle cumin seeds. When they splutter, add the whole spices: coriander seeds, fennel seeds, poppy seeds and black peppercorns. </li>
<li>Add the onions and saute them until transparent and starting to brown. Add the ginger-garlic paste and stir. Let cook until the raw smell goes away. </li>
<li>Add the tomatoes and sprinkle salt. Cover and let cook until the tomatoes are soft and mushy. Remove cover and stir. <div class="separator" style="clear: both; text-align: center;">

<li>When cooled, grind to a smooth paste adding a little water. </li>
<li>Heat the same pan again and add a tsp. of oil. Add the paste and a cup of water. Stir and bring to a rolling boil. </li>

Most of the times it's real fun being with kids and teaching them, watching them grow! Sharing a colorful activity we did with the 5-year old kids. We talked a lot about colors, rainbows, the colors of the rainbow. We mixed to make indigo and orange colors. And then all of the kids took turns to choose a color of the rainbow and paint their own hand with the color. Then they all made hand prints on a big sheet of paper which we later hanged in our classroom.<div>

<li>Begin by adding the 3 primary colors in 3 different dishes: red, yellow and blue. Here we talked about primary colors which we cannot make with any other colors but we have to buy these 3 colors and after that we can make all the colors with these 3 colors. </li>
<li>We then talked about secondary colors: orange (red+yellow), purple (red+blue) and green (yellow+blue). We simultaneously made those 3 colors as well. </li>
<li>We also talked about how can we make black color: and we reached the conclusion that we must mix all the dark colors available so we will get black color. So we tried mixing the dark colors: red, blue, orange, purple and green. We ended up with a brownish color. Then we tried adding more and more purple and finally we achieved a shade almost close to black. So we reached the conclusion that we should not have mixed orange instead only red. </li>
<li>We even made indigo color: blue + purple. Now we have all the colors of the rainbow. </li>
<li>After we had our colors ready, we laid down the big sheet of paper and talked about the team-work poster with everyone's hand prints. </li>
<li>Then started the real fun: each child took turns to choose a color, painted his/her one hand entirely and made a hand print on the big sheet. Some of them loved to directly dip their hand in paint and make the print impression. <div class="separator" style="clear: both; text-align: center;">

<li>Few of our children wanted to make their individual hand prints on their own papers. So we agreed on that and they chose a different style: painted the hand with a different color, and all the fingers with different colors. This was a fun and colorful activity. We had a lot of talks about colors: primary colors, secondary colors and how to make different colors like black, brown, indigo etc. How many are the colors of rainbow, which colors and the order of colors. Vegetable stock: 1 cup<br />

<li>Boil the pasta according to the instructions on the pack. Drain the water and keep the pasta aside. </li>
<li>Heat oil in a pan and add garlic and the chicken. Fry until the chicken is almost cooked and white from both sides. Drain from the oil and keep aside. </li>
<li>Heat the same oil and add the onions. Let cook until the onions start browning. </li>
<li>Add the baby spinach and let cook just till the leaves start wilting. Cut baby tomatoes in half and add to the pan. </li>
<li>Add salt, oregano and chili flakes. Add the vegetable stock and bring everything to a boil. </li>
<li>Add the cooked chicken and give everything a stir. </li>
<li>Add the boiled pasta and tomato ketchup. Mix everything well and stir nicely. Let cook for about 4-5 minutes until all flavors are mixed and it reaches the desired consistency. </li>
<li>Sprinkle black pepper and turn off the flame. Serve. </li>

Salads, specially home-made with basic and simple ingredients are very useful in weight loss as they really help to feel full and makes one avoid fried and spicy food. I make salads with no spices and just use pink salt and black pepper. Everybody is different and has different requirements and different activity levels. But I try to eat a full and nice meal for lunch as my activity level is high during the day. I try and replace my dinner with salads whenever I can. It actually takes much less time and effort to prepare salad for dinner. I, for one feel more full also because of the fact that I am not able to gulp down the salad very quickly like I do some other foods like rajma-chawal etc. and have to take about 20-30 minutes to chew the salad nicely and properly. You can try and prepare this healthy salad for dinner sometimes and you will feel light and fresh and ultimately will start seeing changes in the weight.<br />

<li>Peel and chop the boiled potato into bite-sized pieces. </li>
<li>To a serving dish, start adding the salad ingredients one by one: boiled black chana, cherry tomatoes, arugula leaves, boiled potato, grated ginger. Toss well. </li>
<li>Add the feta cheese on the top. Grate some cheese for garnish if you wish. </li>
<li>Garnish with coriander leaves. </li>
<li>Sprinkle the lemon juice and add salt and pepper. Toss again if you wish. </li>
<li>In a small bowl, add the olive oil. Add salt and black pepper to it and mix. Pour over the salad. </li>
<li>Salad is ready to enjoy! </li>
<li>Tip: you can keep the boiled potato and boiled chana warm if you don't want to eat cold salad. </li>

A simple banana walnut cake!<br />

Ingredients:<br />
<br />
Whole wheat flour: 1 cup<br />
Sugar: 1/2 cup<br />
Vegetable oil: 1/4 cup<br />
Ripe bananas: 2 large<br />
Eggs: 2 large<br />
Vanilla essence: 1 tsp.<br />
Baking soda: 1 tsp.<br />
Cocoa powder: 2 tbsp.<br />
Beaten yogurt: 1/2 cup<br />
Walnuts (chopped): according to taste<br />

<ol style="text-align: left;">
<li>Pre-heat the oven at 200 C for about 20 minutes while you prepare the mix. </li>
<li>Begin by sieving the whole wheat flour in a big mixing bowl. Sieve in cocoa powder and the baking soda. </li>
<li>Mix everything slowly but really well so that there are no lumps remaining. Keep aside. </li>
<li>In another big mixing bowl, add the sugar. Break the egg in the bowl and beat it well. Do not over mix. I used a hand whisk. </li>
<li>Now add the well mashed bananas and again mix well. </li>
<li>Add the oil, yogurt and vanilla essence. Mix everything slowly with the help of whisk. You can also use the electric mixer. </li>
<li>Slowly begin to add the flour mix to this mix. Add a little at a time and keep on mixing but remember not to over mix. Just mix it until you see no lumps. The mix should be little flowy and not dense. </li>
<li>Fold in the walnuts in the mix. Save some of the walnuts for the base if desired. </li>
<li>Grease the cake mold and sprinkle little walnuts on the base if desired. </li>
<li>Pour in the mixture. </li>
<li>Bake for 30 minutes at 200 C. Then do the toothpick test. Insert a toothpick in the middle of the cake, it should not have the batter stuck to it, it should come out clean with little crumbles. If not done, bake for a little more time until the toothpick comes out clean.</li>
<li>Remove from the oven and let cool for about 10-15 minutes. </li>
<li>Invert the pan and remove the cake from the mold in a tray or a plate. </li>
<li>Let cool completely and cut in desired shapes. Enjoy! </li>

I really love Hyderabadi cuisine and have prepared a lot of Hyderabadi dishes. I love them as they are spicy and the perfect flavor of sweet and spice. This is a Hyderabadi spice mix which can be added to the dishes instead of the usual garam masala to enhance the flavor of dishes manifold. Not just in Hyderabadi dishes, a bit of this can also be added to the usual dishes to redefine the flavors.<br />
<br />
Ingredients:<br />
<br />
Cinnamon: 4 sticks (big)<br />
Black pepper: 4 tsp.<br />
Green cardamom: 6<br />
Saffron: 1 tsp.<br />
Cloves: 8<br />
Nigella seeds: 2 tsp.<br />
<br />
<br />
<ol style="text-align: left;">
<li>Dry roast all the ingredients except saffron. Don't discard the covers of cardamom. </li>
<li>Let cool. </li>
<li>Grind all the dry roasted ingredients along with saffron to form a coarse powder. </li>
<li>Store in air tight container at room temperature. </li>
<li>Use in Hyderabadi dishes in place of garam masala. </li>

Chai! Chai has always been a heaven for me and even though it can be translated as "tea", the tea is quite nowhere around the Indian Chai! Chai from India is a spiced milk tea which is getting increasingly popular throughout the world. I take my Chai very seriously and I can't compromise on a badly-made cup of tea. Indian Chai produces a warming, soothing effect and gives a wonderful sense of fulfillment and well-being. When I'm home from work, all I crave is a hot cup of chai. It is difficult to resist a second cup. Coffee comes nowhere close to my Chai!<br />
<br />
I also use a specially made chai-masala or tea spice mix to elevate the flavors of my tea. I have previously shared the recipe of the chai masala. If you missed it, here's the recipe:<br />

So why am I talking about Chai here in a muffin post? That's because for a very long time I have been wanting to add this spiced mix to flour and try baking some goodies with it. I was sure they would turn up good. So this Christmas I finally went along to prepare Chai muffins and amazingly they turned out so good and yummy.. crusty from outside and soft from inside. Do try this recipe and I'm sure you will make it again and again!<br />

Ingredients:<br />
<br />
Whole wheat flour: 1 cup<br />
Brown Sugar: 1/2 cup<br />
Baking soda: 1 tsp.<br />

Eggs: 2 large<br />
Yogurt (beaten): 4 tsp.<br />
Cooking oil: 1/4 cup<br />
Vanilla essence: 1 tsp.<br />

<li>Pre-heat the oven to 200° C. </li>
<li>Add the flour to a bowl and add the baking soda to it. Mix well. </li>
<li>Add the spiced tea mix (chai masala) and mix them well. Your dry ingredients are ready. Keep aside. </li>
<li>Now in another bowl add the eggs and the sugar and mix them really well until light and fluffy. You can use a hand mixer or an electric mixer. </li>
<li>Add the yogurt and mix well. Add the cooking oil and vanilla essence. Mix everything well until light and frothy. </li>
<li>Now slowly begin to add the dry ingredient mix to the wet ingredients. Keep mixing slowly. </li>
<li>Add all the mix and mix everything together. The consistency should be a little flowy and not dense. This will make light and fluffy muffins. </li>
<li>Grease the mold and fill upto 3/4 with this mix and immediately put in the oven. I have baked them for Christmas so I used special Christmas mold. </li>
<li>Let bake for 15 minutes and check with a toothpick. If the toothpick is wet then let them be in the oven for 5 more minutes. The outside should be deep brown with a little crust. </li>
<li>When the toothpick has crumbly mix when you do the test that means the muffins are done. </li>
<li>Turn off the oven and take out the tray. Let cool for 10 minutes and remove the muffins. </li>
<li>Cool completely and refrigerate in an air-tight box for up to a week. </li>
<li>Warm for a minute in microwave while serving with tea/coffee.</li>

<li>The child may write his/her name and Merry Christmas/God Jul depending upon age. </li>
<li>A lovely basic Christmas card is ready. You could make many with different colored base for all the relatives/friends. </li>

<li>Draw the easy shape of a gingerbread man as shown in the picture and cut it out finely. It's better if you cut it out from a thick paper as it will be used as stencil. </li>
<li>Your kids could now trace the outline using your gingerbread man cut-out stencil on a brown paper. </li>
<li>Cut out the shape of the gingerbread man. </li>
<li>Draw the eyes and the nose and mouth. </li>
<li>If feeling creative, you could even stick a bow at the neck area of the figure and it can be the gingerbread man. Similarly add a bow on the left side of the head of the figure and it can be a gingerbread woman. </li>

We had collected a lot of pine cones during our outings in the summer months. So we made good use of those to create little glittery pine cone Christmas trees. </div>

<li>Glue the whole pine cone with glue. </li>
<li>Sprinkle different colorful glitters over the pine cone. Roll it in glitter as well if it doesn't become very glittery. </li>
<li>Let dry completely and then can be hung on Christmas tree. </li>
<li>You could also try painting the whole pine cone with green paint mixed with glue and then directly sprinkling glitter to give a little tree effect. </li>
<li>If you don't have a Christmas tree or don't want to hang, you can just use a flattened ball of play dough as a base for the glittery pine cone. </li>

<li>Cut the red fabric according to the size of the toilet paper roll and wrap it around. Glue with glue gun. </li>
<li>Cut little strip of green/gray fabric and tie it around the middle as shown in the picture. </li>
<li>Make the Santa hat as you like and glue it to the red paper ball with the glue gun. </li>
<li>Now let the child draw eyes, nose and mouth on the red ball with the black marker. </li>
<li>Attach the red ball to the toilet paper roll with the help of the glue gun. </li>
<li>Tear little bits of cotton and stick them as beard as shown in the picture. We had used ready to use beard from craft shop but cotton will work as good. </li>
<li>You can decorate the Santa by tying the hat with a strip of different color fabric or sticking cotton to the end of the hat etc. </li>
<li>Cute Santa is ready to be placed on the window/center table as Christmas decoration. </li>
<li>This particular craft was the original idea of a colleague and not mine. I have only shared the craft and process here. </li>

Beading is an excellent way to work on the fine motor skills of young kids. For Christmas, Santa could be made with beads on a square or rectangle beading plate. For making this pattern, it's very important to count and place the particular number of beads in a particular order. It really helps the kids concentrate and work on their mathematics as well. After the beading has been done, the beads could be ironed out by placing a butter paper between the beads and the iron. </div>

Winters are knocking on the door and we have already experienced our first snowfall. Temperatures are dropping down real quick and we crave for warm comfort foods (and drinks) in this weather.. This is the perfect time for warm soups. I had received a soup maker last winter as a gift and there is no better time to put it to good use now. This soup recipe is made in a soup maker but can also be simmered on a stove top. The ingredient which makes this soup special is the soup spice mix (soup masala) which I add to all my soups.<br />

This is a warm and comforting soup and the mix of apples and carrots elevated the taste to another level. Apple (chopped): 1<br />
Carrots (chopped): 3<br />
Garlic: 3 cloves<br />
Basil leaves: a handful<br />

<li>Wash and chop the apples, carrots, onion and garlic and add to the soup maker. </li>
<li>Add the washed basil leaves, lemon juice, salt and soup spice mix. </li>
<li>Add the required amount of water and turn on the soup maker. My soup maker prepares the soup in just 6 minutes! </li>
<li>If preparing on stove top, add the chopped apples, carrots, onion, garlic and basil leaves to a mixer. Add water and grind to a smooth paste. </li>
<li>Add this whole mix to a large pot and add water depending upon the required consistency of the soup. </li>
<li>Add the salt, lemon juice and soup spice mix. Mix well and bring to a boil. </li>
<li>Reduce the heat and simmer on medium flame for 10-15 minutes or until it reaches the desired consistency. </li>
<li>Turn off the flame and pour directly into a soup bowl. No need to sieve it. </li>
<li>Sprinkle black pepper and garnish with cream if desired. Serve hot! </li>

Very often I purchase a lot of mint as I cannot resist beautiful, fresh mint in stores and then I try to use that lot of mint in so many various dishes to finish that wonder herb as it starts blackening and going bad after just few days and how much mint-coriander chutney can one make? I obviously do prepare so many other dishes from mint all the time I have mint in abundance but this mint dhokla is my favorite as it's an instant and quick option for a breakfast or snack and is easy to prepare and filling, yummy and satisfying.<br />

Semolina (sooji): 1/2 cup<br />

Lemon juice: 3 tsp.<br />
Mint leaves: a big handful<br />
Eno fruit salt: 1 tsp. OR baking soda (1/2 tsp.) and baking powder (1/2 tsp.)<br />
Cooking oil: 3 tsp.<br />
Mustard seeds: 1 tsp.<br />
White sesame seeds: 1 tsp.<br />
Dried red chili: 1<br />

<li>Wash and grind mint leaves with water in a mixer. </li>
<li>Mix the chickpea flour, semolina, salt and lemon juice in a big bowl. Add the mint water to the bowl and mix well. Add more water if required to make a flowing batter like consistency. </li>
<li>Leave this mixture aside for 20 minutes. </li>
<li>Add eno fruit salt or a mix of baking soda and baking powder. Sprinkle little water on top, the soda will start bubbling. Mix it slowly but nicely. </li>
<li>Add the whole mix immediately to a greased microwave safe bowl. </li>
<li>Cover the bowl and microwave on high power for 3 minutes. Remove and do the toothpick test. If toothpick comes out clean, the dhokla is done; otherwise microwave for another 30 seconds. </li>
<li>Remove the dhokla on a plate and let cool. <div class="separator" style="clear: both; text-align: center;">

Banana chocolate muffins are the most favorite in my household and is a mandatory preparation every weekend to prepare and stock for the week to be eaten as tea time snack. This time I was in an experiment mode and wanted to try a different flavor. But hubby wanted to keep the chocolate flavor intact. So made these coffee orange muffins using whole wheat flour. They turned out to be yummy and was a good change for our tea time!<br />

Ingredients:<br />
<br />
Whole wheat flour: 1 cup<br />
Sugar: 1/2 cup<br />
Cocoa powder: 1 heaped tbsp.<br />
Coffee: 1 heaped tbsp.<br />
Baking soda: 1/2 tsp.<br />
Orange juice from 2 large oranges<br />
Eggs: 2<br />
Oil: 1/4 cup<br />
Yogurt: 2 tsp.<br />
Orange essence: 1 tsp.<br />

<li>Pre-heat the oven at 200 C for about 20 minutes while you prepare the mix. </li>
<li>Begin by sieving the whole wheat flour in a big mixing bowl. Sieve in cocoa powder, coffee and the baking soda. </li>
<li>Mix everything slowly but really well so that there are no lumps remaining. Keep aside. </li>
<li>In another big mixing bowl, add the sugar. Break the eggs in the bowl and beat it well. Do not over mix. I used a hand whisk. </li>
<li>Now add the orange juice and mix well. </li>
<li>Add the oil, yogurt and the orange essence. Mix everything nicely with the help of whisk. You can also use the electric mixer. </li>
<li>Slowly begin to add the flour mix to this mix. Add a little at a time and keep on mixing but remember not to over mix. Just mix it until you see no lumps. The mix should be little flowy and not dense. </li>
<li>Spray the muffin molds (I used paper molds) with very little oil. Fill in the mixture in all the molds up to half. </li>
<li>Bake for 30 minutes at 200 C. Then do the toothpick test. Insert a toothpick in the middle of the muffin, it should not have the batter stuck to it, it should come out clean with little crumbles. If not done, bake for a little more time until the toothpick comes out clean. </li>
<li>Remove and serve warm with tea. Let cool completely and it can be stored for up to a week in the refrigerator in air tight container. Enjoy! </li>

Ginger-garlic paste: 3 tsp.<br />
Coconut milk: 1 cup<br />
Tomato (finely chopped): 2<br />
Salt to taste<br />
Red chili powder: 1 tsp.<br />
Garam masala: 1 tsp.<br />
Mango powder: 1 tsp.<br />
Black pepper: 1/2 tsp.<br />

<li>Blanch the spinach and grind to a puree and keep aside.</li>
<li>Heat oil and add the cumin seeds and mustard seeds and let them splutter. </li>
<li>Add the chopped onion and fry until it's transparent. </li>
<li>Add the ginger-garlic paste and let cook until the raw smell goes away. </li>
<li>Add the coconut milk and mix well. Let cook for about 5 minutes. </li>
<li>After 5 minutes, add the tomatoes and sprinkle salt. Let cook until the tomatoes are soft and mushy. </li>
<li>Add the dry spices: red chili powder, mango powder and garam masala. Mix everything, cover and let cook for another 5 minutes. </li>
<li>Remove the cover and add the spinach puree. Mix well. We don't need to cook more at this stage as the spinach is already cooked in the process of blanching. </li>
<li>Add the boiled eggs (whole or halved) and turn off the flame. Sprinkle black pepper and serve hot! </li>

We have chosen the topic "Rainbow" for our project this term in our pre-school class and that itself makes me happy: as it means a lot of colors and more colors and colorful activities all term round!<br />
In the last days of summer, on a warm and sunny day, we decided to do this outdoor activity of rainbow walking with our kids.<br />

Talking about the colors of rainbow was really nice, specially the kids were really interested in *Indigo* color as they had never before used it in any painting. We talked about what colors do rainbow has, and I got varied replies from brown, black to white, pink etc. and of course the colors actually in a rainbow like purple, green, red blue. It's even a great activity to talk about colors, and talk about number of colors with the pre-schoolers as they think it's fun to talk about so many colors; and it makes it more interesting as everyone had different answers.<br />

This is how I carried out this super-fun rainbow walking activity:<br />

<ol style="text-align: left;">
<li>I put out liquid paint of all the seven colors of the rainbow in dishes big enough for them to put their feet in. I first made indigo color by mixing blue and violet, and made orange color by mixing red and yellow. The children were pretty excited to make new colors as well. </li>
<li>After that I poured out violet, blue, green, yellow and red in all different dishes. </li>
<li>I took four large sheets of paper and taped them together and fixed the sheet on the outdoor floor with the help of clear tape so that it holds in place while children walk over and no accidents happen. </li>
<li>Then I prepared how the children can wash their feet: I just took a bucket half filled with water and a towel so that they could wash their feet and dry themselves before putting on their shoes back. </li>
<li>Then they dipped their feet in their favorite color and walked over the big sheet from one side to another. </li>
<li>It was so wonderful to see the whole paper getting filled with rainbow colored footprints. Also overlapping colors made it even more attractive. </li>
<li>The children loved doing this activity. This is a really good activity to learn about math and colors, develop the body coordination, and developing gross motor skills and balancing. </li>

Fall has officially begun and the days have started to get cold. As we feel the little chill in the air, we do crave something warm, soothing and yummy which is filling as well. So this is the first soup I prepared to welcome the season of fall. I made this soup in my soup maker, wherein I just dump everything and get yummy, creamy soup in just 20 minutes. But this can also be prepared traditionally on a stove top.<br />

Tomatoes: 4<br />
Carrots: 2<br />
Parsley leaves: a bunch or according to taste<br />

<li>Wash and chop the beetroot, tomatoes, carrots, ginger and parsley nicely. Save some of the parsley for garnish. </li>
<li>Add little water and grind all the vegetables to a coarse paste. </li>
<li>Transfer this paste to a big boiling pot and add 4 cups of water. Add the salt and the soup spice mix and mix everything well. </li>
<li>Simmer for about 30 minutes or until the soup reaches the desired consistency. </li>
<li>Add to the serving bowl, garnish with fresh parsley, sprinkle black pepper and serve hot! Enjoy. </li>

The summer is past and the cold days of winter will soon be knocking our doors. The weather outside is going to be unsightly, but your skin doesn't have to be! Rough, dry skin is often a result of the harsh winter against our skin, which is often very itchy and uncomfortable. Along with drinking lots of fluids in the cold weather, here's a winter skin care face pack to prevent rough and dry skin and keep it smooth and glowing throughout the winters!<br />

Ingredients:<br />

Daliya (oatmeal): 1 cup<br />
Rice (basmati or any other): 1 cup<br />
Besan (chickpea flour): 1/2 cup<br />
Coffee powder: 1 heaped tbsp.<br />
Cocoa powder: 1 heaped tbsp.<br />
Mint powder: 2 tsp.<br />
Desiccated coconut: 2 tsp.<br />
Almonds: a handful (8-10)<br />
Dried apple: 1<br />
Dried rose petals (or any other flower, I used tulip)<br />
Dried orange peels (according to preference)<br />
Iced tea (lemon flavored): 1 tsp. (optional)<br />
Saffron: 1/2 tsp.<br />

<li>Lightly toast the almonds and remove from the flame. Let cool. </li>
<li>Add the oatmeal, rice, desiccated coconut, almonds, saffron, dried apples and dried orange peels to the mixer and grind it to a smooth powder. </li>
<li>Transfer contents to a big bowl and one by one add and stir in chickpea flour, coffee powder, cocoa powder, mint powder, iced tea a crushed flower petals. </li>
<li>Mix everything completely using your hands. This whole pack should be dried and no drop of water or moisture should be added. Transfer contents to an airtight box and store on room temperature. Use everyday. <div class="separator" style="clear: both; text-align: center;">

<li>Heat oil in a pan and crackle the coriander seeds and nigella seeds. Add the dried red chili. </li>
<li>Make a smooth paste of onions and add to the pan. Fry until the raw smell disappears and it starts leaving oil on the sides. <div class="separator" style="clear: both; text-align: center;">

<li>Add the ginger-garlic paste and mix well. Let cook for another 2-3 minutes. </li>
<li>Sprinkle a bit of water. Mix and stir well. Sprinkle little water again after 2 minutes and stir well. Let cook. Repeat this process 7-8 times, keep sprinkling little water and stirring and leaving for about a minute each time. This will make the onion paste creamy without being watery. </li>
<li>Now add the marinated chicken, stir well and fry in the masala. Add the dry spices: salt, red chili powder, cumin powder and coriander powder. Mix everything well and fry for about 5-7 minutes. <div class="separator" style="clear: both; text-align: center;">

<li>Grind the tomatoes in a paste and add the ground tomatoes at this stage. Add the garam masala. Mix well and let cook for about 8-10 minutes until everything is incorporated in the masala and it starts leaving oil on the sides. <div class="separator" style="clear: both; text-align: center;">

<li>Add the yogurt, mix well and cover. Let cook for another 5 minutes. </li>
<li>Remove cover and mix well. Add 2 pinches of saffron and powdered green cardamom. Mix well. Let cook for another 5 minutes and turn of the flame. </li>
<li>Squeeze the lemon juice over the chicken curry, top with the remaining saffron and garnish with coriander leaves. Serve hot! </li>

I belong to Jaipur and Pao-Bhaji at roadside stalls at Pandit Pao Bhaji has always been my favorite snack all my life. I have always missed the Pandit pao bhaji and have prepared the same many times. But this particular time, as I was exploring the many benefits of my slow cooker, I thought to give a try to prepare the bhaji in the slow cooker; and trust me, I have never been able to prepare a richer, creamier and yummiest pao bhaji before on my stove top.<br />

So here's the step by step method that I followed to achieve the yummiest ever pao bhaji!<br />

This scrambled egg and cucumber salad is absolutely cooling and refreshing idea on a hot summer day. This is my favorite salad and I try to eat this for breakfast on weekends. Prepared with minimal ingredients and no dressing, it flavorful and healthy at the same time.<br />

Ingredients:<br />

Eggs: 2<br />
Cucumber: 1<br />
Cooking oil: 2 tsp.<br />
Milk: 2 tsp.<br />
Salt to taste<br />
Black pepper powder to taste<br />
Lemon: 1/2<br />
Parsley leaves/coriander leaves: a few<br />

<li>Heat oil in a pan and break eggs in the pan when the oil is hot. </li>
<li>Stir quickly and as the eggs are cooking, just add the milk and stir well. </li>
<li>Let it cook until it reaches the desired consistency. I don't like runny egg scramble so I let it cook until it's just past the runny stage, and it not dry. </li>
<li>Turn off the flame. </li>
<li>Clean and chop the cucumber in thin slices. Don't peel the skin. Plate the cucumber. </li>
<li>Add the scrambled eggs on the side. </li>
<li>Sprinkle salt and pepper and some lemon juice. </li>
<li>Garnish with finely chopped parsley leaves or coriander leaves. </li>
<li>Enjoy! </li>

Simple, quick and easy option for lunch/dinner which doesn't require much time and efforts: vegetable spaghetti. This is also a great option for lunch box.<br />

Ingredients:<br />

Spaghetti: 100 gm<br />
Olive oil: 3 tsp.<br />
Garlic (chopped): 3 cloves<br />
Onion (chopped): 1<br />
Capsicum (finely chopped): 1<br />
Tomato (chopped): 1<br />
Salt to taste<br />
Red chilli powder: 1 tsp.<br />
Mango powder: a pinch<br />
Black pepper powder: 1/2 tsp.<br />
Dried oregano: 1/2 tsp.<br />
Chili flakes: a few<br />
Tomato ketchup: 2 tsp.<br />

<li>Fill up a pot 1/2 with water, add a pinch of salt and bring it to a boil. Add the spaghetti according to the instructions on the pack and let cook until its al dente. </li>
<li>Drain in a colander over the sink and keep the spaghetti aside. </li>
<li>Heat oil in a pan and add the chopped garlic and fry until its brown. </li>
<li>Add the onions and fry until they turn transparent. </li>
<li>Add the diced capsicum and sprinkle a little salt. Mix and let cook until the capsicum is done, it should break with the ladle but still has a crunch in it. </li>
<li>Add the tomato and sprinkle red chilli powder, mango powder and mix well. Let cook until the tomatoes are soft and mushy. </li>
<li>Add the boiled and cooked pasta to the pan and mix well. Sprinkle little water to loosen up the pasta if required. </li>
<li>Sprinkle the black pepper powder, dried oregano, chili flakes and the tomato ketchup. Give a good stir and let cook for about 2-3 minutes more. Turn off the flame and serve hot. </li>

Hands are the most used parts of our bodies. They are used from typing, cooking, scrubbing dishes to writing documents and giving hi-fives, driving and styling our hair, and practically everything else! Yet they are often the least cared-for body parts while we spend a lot of money on our face and hair-care etc. Our hands go through a lot on a daily basis and still care for our hands, more often than not, falls on the bottom of our list of beauty priorities. But did you know, hands show the first signs of ageing, even before our face? Rough, dried hands, chappy nails, dark spots, veins and loose skin on your hands are no pretty sight; and also they give away your age earlier than your face.<br />

So, it's really high time we start caring for our hands and showing them some love with a regular care regime. With busy lifestyle, it's often easy to ignore our personal care, let alone caring for our hands. I had faced the issue of having dried hands, peeling off cuticles and chapped nails for a very long time and it was almost impossible to take care of hands everyday. I tried some hand creams which gave nice results but are so expensive if I were to use them every single day so I ended up skipping them many times. And then I decided to use something that would keep my hands soft and supple, without splurging a lot of money. With all of this, I was also short of time to experiment making a cream or a lotion from scratch. So I used a regular, basic, flavorless and odorless cheap body butter cream from my local store and converted it into a nourishing hand cream. With the use of this cream in just 15 days, my hands have become softer, cuticles are no longer dry and the nails are getting healthier.<br />

Ingredients:<br />

Basic body butter cream (odorless and flavorless): 6 tbsp. (Use any cream you can find)<br />
Olive oil: 3 tsp.<br />
Coconut oil: 1 tsp. (optional)<br />
Glycerin: 2 tsp.<br />
Lemon juice: few drops<br />
Cocoa powder: 1 tbsp.<br />

<li>Take out the body butter cream in a bowl. </li>
<li>Warm the olive oil and coconut oil in microwave for a minute each, in separate bowls. </li>
<li>Add both the oils to the body butter and mix nicely to incorporate the oils completely in the cream. </li>
<li>Add the glycerin and lemon juice. Mix nicely again. </li>
<li>Add the cocoa powder and mix everything vigorously so there are no lumps remaining of cocoa powder. </li>
<li>Warm everything again in a double boiler till it's just warm but not hot and bubbling. </li>
<li>Let cool completely and transfer this cream to a box with a tight lid. Any old and clean cream box would be ideal to store this hand cream. </li>
<li>Use every night before going to bed. It will help keep your hands, nails and cuticles soft and supple and delay ageing. </li>

Olive oil: Olive oil contains omega-6 and omega-3 fatty acids, which keeps your skin smooth and soft to touch. It is filled with vitamin E which is a famous antioxidant. It prevents oxidation in skin cells so the skin looks much younger and less wrinkles appear on the skin surface. It will make your hands baby soft and smooth. </div>

Coconut oil: Coconut oil is naturally antibacterial and anti-fungal, it's a natural moisturizer and can penetrate our skin better than other oils. </div>

Glycerin: Glycerin is a humectant, which means it attracts water. When applied to the skin, it seals in moisture that might otherwise escape. That is why it helps combat dry skin. It helps keep the skin more hydrated and the hands won't look dry and scaly with the use of glycerin. </div>

Lemon juice: Lemon juice has antibacterial properties and it is used to avoid darkening of skin of hands and it also helps in keeping the skin shining and glowing. It also helps reduce acne and dark spots on the hands. It even moisturizes and tones, and fights wrinkles. </div>

Well, teaching kids comes with a lot of benefits, as it's a process of learning and experimenting for oneself with so many fun activities while teaching. I did this "crumpled paper art" recently and I must say it was really interesting and fun for children, and I really love the bright, colorful end-products! This is a very easy activity to do with 3-5 year old children with a bit of supervision. This is exactly how to create these simple and fun crumpled paper art.<br />
<br />
Materials required:<br />
<br />
Paper (any desired size, but I used 1/2 of an A4 size paper)<br />
Liquid paint colors (2 or 3 colors)<br />
Small brush to paint<br />

<li>Let the child crumple the paper he has nicely with his hands. </li>
<li>Then let him/her choose one single color he wants to use and let him color the outside of the crumpled paper with that color using the brush. </li>
<li>Now let him open that paper. There will be paint on few areas on the paper and the rest will be white. So let the child crumple the paper again nicely with his hands.</li>
<li>Now let him chose another color and paint the remaining white areas with the another color. The colors can even overlap as they will form even colorful pattern. </li>
<li>After it's done, let the child open up the paper carefully. The colors will be spreading and mixing on the paper creating a pattern. </li>
<li>Crumple the whole colored paper one more time nicely and open up the paper very carefully as it would be wet with the color and we don't want our art to tear. </li>
<li>You can use a third color as well and repeat the same steps but we used only two colors as by the end of using two colors and crumpling the paper, it was too wet to use another color. </li>
<li>Let it dry completely. Your crumpled paper art is ready! Make many with your child using different colors each time. Decorate in your child's room.<div class="separator" style="clear: both; text-align: center;">

<li>Use an apron before you start this paint activity as it's a messy activity and children can easily get color on their clothes. </li>

Maa ki dal (typically called maah di daal) or kaali daal is a typical recipe made in Punjabi households and this recipe my dear, has always been very much famous in my home. This is a very simple version of dal, unlike the <a href="http://brijdeepskitchen.blogspot.se/2014/12/dal-makhni-royal-taste-of-punjab.html">Dal Makhani</a> recipe, there is no butter, ghee, cream, cashews, spices etc. added in this recipe and this is a perfect homely recipe made only using black whole lentils, simmered in a simple masala and served without any garnish and served with simple garam garam ghee wali chappati.<br />

My Nani has a saying about this dal in my home which goes like: "Maah di daal, te hove do ghee chupdi rotti naal" !! (Black lentils with two ghee smeared chappatis is a heaven!).<br />

Black whole lentils: 1 cup<br />
Onion (chopped): 1<br />
Garlic (chopped): 4 cloves<br />
Ginger (grated): 1 inch<br />
Tomato (chopped): 1<br />
Green chili (finely chopped): 1<br />
Cooking oil: 2 tsp.<br />
Cumin seeds: 1 tsp.<br />
Asafoetida: a pinch<br />
Salt to taste<br />
Red chili powder: 1 tsp.<br />

<li>Soak the black whole lentils in water for 6-8 hours or overnight. </li>
<li>Wash thoroughly and drain the water in which the lentils were soaked. Pressure cook for 8-10 whistles with salt or until soft. </li>
<li>Heat oil in a pan and crackle the cumin seeds. As they crackle, add the asafoetida. </li>
<li>Add the onion and ginger and fry the onions until they are transparent. </li>
<li>Add the garlic and fry for about 2 minutes. </li>
<li>Add the tomatoes and green chili and sprinkle salt. Mix well and let cook until the tomatoes are soft and mushy. </li>
<li>Add the red chili and turmeric powder and mix well. Turn off the flame after 2 minutes. </li>
<li>Add this masala to the boiled dal and simmer for about 15 minutes. Turn off the flame and serve hot. </li>
<li>This dal is best served with simple chappatis smeared with ghee. Please do not add any garam masala or any other masala. This simple, homely flavor is actually the specialty of this dish without and added spices. Ideally this dal is also not garnished with anything and savored in its simple form.</li>

Ingredients:<br />

Hung yogurt/thick Greek yogurt: 1 cup<br />
Milk: 6 tbsp.<br />
Cocoa powder: 3 tbsp.<br />
Honey: 4 tsp.<br />

<li>Take the milk in a bowl and slowly mix in all the cocoa powder, stirring nicely so there are no lumps remaining. </li>
<li>Microwave the milk for 1 minute on high to cook the cocoa powder and then let it cool down completely. </li>
<li>Slowly add this to the hung yogurt or Greek yogurt and mix completely. Add the honey to this mix and stir well so that it mixed in uniform manner. </li>
<li>Take out the mix in serving bowls and refrigerate for about 4-6 hours. </li>
<li>Remove from the fridge, decorate as you wish and serve shrikhand chilled immediately.</li>

Hot and spicy curry with a beautiful fiery color, without the use of much spices and red chilis, this fish curry is a yummy and wonderful companion with boiled rice and makes for an awesome meal for those who love Indian style fish curries (and those who don't are sure to fall in love with this one)!!<br />

Ingredients:<br />

Fish: 400 gm (I used salmon fish)<br />
Curry leaves: a handful<br />
Fenugreek powder: 2 tsp.<br />
Lemon juice: 2 tsp.<br />
Cooking oil: 3 tsp.<br />
Fennel seeds: 1 tsp.<br />
Mustard seeds: 1 tsp.<br />
Dried red chili: 1<br />
Onion (chopped): 1 large<br />
Ginger-garlic (crushed): 4 tsp.<br />
Tomato (chopped): 2<br />
Salt to taste<br />
Red chili powder: 1 tsp.<br />
Turmeric powder: 1 tsp.<br />
Coriander powder: 1/2 tsp.<br />
Tamarind: 2 tsp.<br />
Coconut milk: 1/2 cup<br />

<li>Clean and cut the fish into desired size and marinate it with fenugreek powder, half the curry leaves and lemon juice and leave for 30 minutes. </li>
<li>Heat oil and fry the marinated fish from both sides until crispy and golden. Remove from the pan and keep aside. </li>
<li>Heat up the same oil on medium flame and splutter mustard seeds and fennel seeds. Add the dried red chili. </li>
<li>Add the chopped onions and fry until the onions are transparent. </li>
<li>Add the crushed ginger-garlic and fry until the raw smell disappears. </li>
<li>Add the chopped tomatoes and sprinkle salt. Cover and let cook until the tomatoes are soft and mushy. </li>
<li>Remove cover and add the dry spices: red chili powder, turmeric powder and coriander powder. Mix well. Add the tamarind and mix well again. </li>
<li>Add the coconut milk, mix everything well and cover again. </li>
<li>Remove cover after 5 minutes and add 3 cups of water. Cover again and let simmer and boil for 10-12 minutes. </li>
<li>Remove cover and let cook open for another 5 minutes. Give a good stir and add the fried fish. Turn off the flame and cover. </li>
<li>Remove cover after 10 minutes and the yummy, spicy curry is ready to eat. Serve with plain boiled rice or jeera rice. </li>
