Kadhai Chicken Masala



Ingredients:

Chicken: 200 gm
Cooking oil: 3 tsp.
Garam masala: 1 tsp.
Coriander seeds: 1 tsp.
Turmeric powder: 1 tsp.
Yoghurt: 4 tsp.
Onion (sliced): 1
Curry leaves: a few
Bay leaf: 1
Cinnamon stick: 1 inch
Cloves: 3
Black peppercorns: 1 tsp.
Cumin seeds: 1 tsp.
Garlic (chopped): 3 cloves
Tomato puree of 2 tomatoes
Red chilli powder: 1 tsp.
Salt to taste


  1. Make a paste of yoghurt, garam masala, coriander seeds and turmeric powder. Marinate the chicken in this mix for about 2-3 hours.
  2. Heat oil in a pan and add curry leaves. Add the onions and fry until they start getting brown.
  3. Grind together bay leaf, cinnamon, cloves, peppercorns and cumin seeds. Keep aside.
  4. Add garlic and mix. Fry for about 2 minutes.
  5. Add the tomato puree, salt, red chilli powder and the ground spice mix. Mix well and let cook for about 2 minutes.
  6. Add the marinated chicken and mix well. Let cook for a minute.
  7. Add 1/2 cup water and Cover. Let cook for 15 minutes. Remove cover, simmer for another 5 minutes and serve hot.
